A Recipe for Anchovy Fried Rice
Ingredients:
- 2 cups cooked rice (preferably cold, leftover rice works best)
- 2 tablespoons vegetable oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4-5 anchovy fillets, finely chopped
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce
- 1/2 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish, optional)
- Heat a large skillet or wok over medium-high heat. Add the vegetable oil and heat until shimmering.
- Add the chopped onion and garlic to the skillet. Cook, stirring frequently, until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
- Add the chopped anchovy fillets to the skillet. Cook, stirring constantly, until the anchovies begin to break down and become aromatic, about 2 minutes.
- Add the cooked rice to the skillet. Stir-fry the rice with the onion, garlic, and anchovies, breaking up any clumps of rice with a spatula.
- In a small bowl, mix together the soy sauce, fish sauce, sugar, and black pepper. Pour the sauce over the rice mixture and stir-fry for another 2-3 minutes, until the rice is well coated with the sauce.
- Push the rice mixture to one side of the skillet. Pour the beaten eggs into the empty side of the skillet. Cook, stirring constantly, until the eggs are fully cooked and scrambled.
- Stir the scrambled eggs into the rice mixture until well combined. Remove the skillet from the heat.
- Serve the anchovy fried rice hot, garnished with chopped green onions and sesame seeds, if desired. Enjoy!
